Analysis of Vitamin C in Frozen Green Beans using CCD OOI Detection. Brian Theobald; Joe Bowles; Nita Birdsong.  2006.

Ascorbic acid (C6H8O6) is a water soluble vitamin and is a necessary supplement because it cannot be synthesized by the human body. Vitamin C is needed in the diet to prevent scurvy, whose symptoms include hemorrhaging, joint pain and exhaustion. Frozen green beans samples and a vitamin C pill were attained and analyzed using various cooking methods. A spectrophotometer was used to measure the difference in absorbance values from a redox reaction with 2,6-Dichlorphenolindophenol (DCPIP). Values found for green beans samples fell below the detection limit of 0.287mg/L and could not be quantified. The analysis for the vitamin C pill had a 38% loss after boiling for 5 minuets and a 48% loss from the listing on the tablets bottle.
